So Ive found a recipe...

175g each of sugar, butter, SR flour
3 eggs
3/4 tsp baking powdee
1 x lemon - zest and juice
100g extra sugar for topping

So about right????

It's basically like most others, it's a victoria sponge ratios with added lemon, I like them very lemony so I'd do zest of 2 lemons.

Mary Berry's one is much the same but with some extra flour which might make it a little denser, no harm either and you could argue you'll get more cake at less cost, flour is the cheapest thing in there!

I made it for the first time today. Followed goodfoods recipe but my granddaughter (6yrs) suggested adding lemon curd into the mix. It was delicious.

I use the BBC Good Food recipe except I zest two lemons not one.

I always add half a jar of lemon curd but protect the top with foil or it burns
