i.e. something fresh with lemon grass, lime, fish sauce, coriander +/- chilli type things that aren't actually thai beef salad? I love it but we can't keep repeating it and am after some other options.

I do something similar with fish or chicken.
Maybe make a curry with similar ingredients and coconut milk.

Or salads/sambals with lots of chilli and coriander? I dice toms, cukes, peppers and onion and have like this.

ah yes - the salads sound good - not so keen on coconut milk - it's ok but just doesn't do alot for me!

pomelo/prawn/beansprouts/fried onion

pink grapefruit/avocado/shredded iceberg

grated carrots/white cabbage/shredded chicken/peanuts/mint

all the above with fish sauce/lime juice/sugar/garlic/chili/ coriander dressing.

Add steamed rice and that's a full meal.

You may also like vietnamese stir fried beef with sweet basil leaves.

Oh brilliant - thank you. Do you mean add as many or as few of all those ingredients in together as I fancy?

This is nice.

no
each line is a basic recipe

but of course you can add/remove according to your liking

a very nice variation is a japanese vinaigrette base
that is soy sauce or miso paste/honey/citrus juice/sesame oil

that goes well on shredded cabbage and bitter salad leaves with sweet orange segments, coriander leaves, cashew nuts, sesame seeds and spring onion. top with grilled chicken preferably previously marinated in same sauce.
