I will 'assemble' at home and oven at the party.

Do you mean make nachos from scratch?

Well bought tortilla chips and layering with cheese, salsa, chilli or whatever.

Not a nacho connoisseur I have to say

as you have described but I like some guacamole and sour cream as part of the layering - topped off with sour cream and grated cheese. On huge tray ready for everyone to dig in.

Layer tortilla chips, salsa and grated cheese in shallow dish. Heat through in oven until cheese has melted then add a few dollops of guacamole and salsa (maybe a few jalapeno slices too) before serving.

Wouldn't assemble too long before party as salsa can make tortilla chips go soggy. Can also heat the nachos in a microwave rather than oven if you need to.

we layer tortilla chips with cheese (mix of cheddar and mozzarella works best, tesco sell it ready-grated in bags for topping pizzas), chopped spring onions and finely diced chorizo and heat in oven

then serve with salsa, guacamole and sour cream in separate pots for dipping

less soggy than putting salsa etc in with the tortilla chips.

I layer tortilla chips, and dot layers with refried beans, salsa and grated cheese (mix monterey jack or mozzarella and cheddar. Then I serve creme fraiche, jalapenos, extra salsa and homemade guacamole on the side). I heat for 2-3 minutes in microwave.

To make the guacamole, I combine finely chopped whites of one spring onion, one finely chopped small chili pepper from jar, a couple of finely chopped slices jalapeno peppers from jar, one diced peeled fresh tomato, handful fresh chopped coriander and two coursely mashed avocados. Season to taste with lime juice and salt. Yum!

Need to add that fresh guacamole should not be assembled til right before serving. can have all incredients ready except avocados thhough and just peel and mash the avocados at the last minute.

Thanks everyone.

I did look for Monterey Jack, but Mozzarella will have to suffice
