Who would like to cast their expert eye over this recipe???

I've been given this recipe which is supposed to be delicious. I followed it and it was quite nice. Some of the amounts are not given, so I guessed. I am a rubbish cook so I guess I guessed wrong! If you know about thai style cooking, please can you cast an eye and offer tips/ amounts for next time...

  1. sweat off a large onion, add ginger, fresh chilli and garlic.
  2. stir for 6 minutes
  3. add 1/2 tspn turmeric, 2 tspn garam masala, 1 tspn chilli powder
  4. add chopped chicken, cook and stir for 20 minutes
  5. add tin coconut milk, cherry tomatoes, mushrooms and fresh coriander

What do you reck?

I cooked something similar recently, well it was a ready-made sauce that you added chicken & coconut milk, but I found that for the quantity of sauce the standard tin of 400ml coconut milk was too much.

How much chicken did you have?

The last bit, 5, sounds a bit odd. Would normally expect to fry the mushrooms & perhaps the tomatoes a bit first as well.

I wondered if I'd used too much milk! It was very soggy! The chicken was a bit of a nightmare, as it happens- the recipe said thighs so I got 4. Then it said to chop them, so I had to get the meat off and have no idea how much I ended up with!!! Definitely going for breast next time... told you I am rubbish!!

Although, to be fair, I did add the mushrooms and tomatoes first and let them fry a bit before adding the milk. Small of triumph!!!
