Easter menu

Hi. I have about 14 family members aged 15 - 96 coming for a sit down lunch on Goid Friday and am right out of inspiration for a menu.

I've done slow cooked lamb ( roast dinner and middle Eastern meze style) before, but that feels more like a Sunday thing.

Amy suggestions? TIA.

You're not religious then?
Sounds ideal for Sunday

I made this last year and it was amazing. For 14 you can either double it, or have it with a lot of different salads.

For Good Friday fish or veggie

Salmon tikka, or
delia's Mediterranean cod (w tomato and black olives) smashed baby potatoes and greens.
Or
Pea and king prawn risotto

I'm doing a buffet style lunch on Easter Sunday. Lots of salad, cold meats, veggie quiche, sausage rolls, crusty bread etc. That way, people can help themselves. I'm having an op on my eye the week before, so won't be able to drive. The whole lot will be delivered

No - we won't be mourning/ fasting.

If you're okay with not doing traditional fish or veggie option, I' dgo with a roast chicken but not served as a roast dinner. I'd do it with new potatoes or a pilaf of some sort, and a pile of spring greens. Lots of lemon and garlic flavours rather than anything too rich or spicey.

Slow cooked ham in either treacle or cola. Dauphinois potatoes, salad and bread. Or you could do a whole salmon cooked and served whole and cold with new potato salad, salad. Add loads of bread. Pudding a huge meringue with lemon curd put through the cream and raspberries. Or hot cross bun bread pudding.

Good Friday = fish. How about baking whole salmon(s) in the oven stuffed with lemon and parsley then serving with new potato salad, green leaves, etc

Defiantly41 · 29/03/2025 15:17

Salmon en croute/wellington with new potatoes and a selection of green veg

2 puddings- something lemony eg lemon meringue pie/lemon tart and then something chocolatey eg chocolate trifle, brownies (I always make a big tray of brownies as they freeze well) maybe with smashed up mini eggs/creme eggs on top, or salted caramel swirled through the mix before baking

Probably too much ‘like a Sunday’ for you but our family loves a full on Christmas dinner so I’ve often used a crowd at Easter as an excuse to have turkey and all the trimmings again.

Fish is traditional on Good Friday. PP already suggested salmon en croute which would be my choice (or coulibiac).
i also love a side of salmon spread with pesto and topped with herby breadcrumbs. Can Eiter serve with roast potatoes, veg and sauce or potato salad and a variety of salads.

Tandoori salmon with traybaked saag aloo, basmati and cucumber salsa

KittenPause · 01/04/2025 11:11

I think they will all love your roast lamb and some will probably be looking forward to it if they’ve had it before at yours. I know I would

Tdp123 · 01/04/2025 11:24

Thanks for all your suggestions - I am thinking crisps, nuts, quails eggs with champagne - then a side of salmon (possible encroute), slow cooked lamb, pommes boulangaire, broad beans, aspagarus, with gravy, mint sauce, yorkshire puddings and garlic mayo (for the fish) - chocolate mousse - cheese board.

Sound ok?

Next question - where is the best place to buy a side of salmon? Morrissons?

Sounds absolutely perfect

they will love you for it

Poached salmon, asparagus, new potatoes and a hollandaise or other sauce of your choosing.
Meringue-based fruity pudding.
