Is there any way to rejuvenate dried up citrus fruit?

I left some lemons lying around too long and they've gone hard. Is there a way to still use them? It seems a shame to bin them.

I would slice and freeze them and then use in drinks instead of ice. I understand they work well in a gin and tonic.

You acn still get juice out of them - but it just wont' be as much. I use lemon a lot as a way to add flavour at the end. It's a bit like salt - it punches up existing flavours. So a squeeze of lemon juice into a pasta sauce or some soup at the end.

Or slice it and make ginger, lemon and honey tea.

I use mine to make preserved lemons for any kind of Middle Eastern food. You just need a clean jar and lots of salt. Plenty of recipes out there.

Pop them in the microwave for 10-20 secs then squeeze

Continue drying them till really hard then crush and use in middle eastern Tagine etc, or on most lamb dishes (eg on the edge of roast lamb with garlic and rosemary)
