Isnt it just lovely..

Healthy and easy..

Ordered a batch of tins off amazon

Used to enjoy it in my younger years..
Getting back into it

Particularly good / helpful for low energy days

If it's tinned, watch out for salt levels.

I love anything like this, there is also tumbet which is Spanish and another one similar which I can never remember the name of. Slices of vegetables cooked very slowly in a dish.

And yes put plenty of salt in it.

Ratatouille goes really well with fish, or tagliatelle, or lamb or pork chops, it's such a versatile dish.

I always look out for it on menus when I go to Greece. It signifies to me that it's more of a traditional taverna, possibly.

I’m sorry to hear this.

Ratatouille (tinned or home made) freezes really well. So if you ever have better days and fancy batch cooking or opening a bunch of large tins and decanting them into ziplock bags, this could be a good an economical
option. Great in a jacket potato!

Another thing that freezes well believe it or not is aubergine parmigiana. Contrary to belief, it doesnt necessarily have Parmesan in it, its not named after that. I do it with just tomatoes and aubergine and freeze it in portions. Fabulous stuff. Tons of olive oil in it and plenty of salt.
