Looking for the Best Tandoor Recipe: Any Recommendations?

I’ve been wanting to try making tandoor-style dishes at home but haven’t had much luck finding the perfect recipe. Does anyone have a tried-and-true tandoor recipe they recommend? I’m especially interested in traditional dishes like tandoori chicken, naan, or even how to get that authentic smoky flavor. Any tips or techniques would be greatly appreciated!

Not a recipe exactly, by my method of tandoori chicken is:

  • buy a whole chicken, joint it and take the skin off
  • make a marinade from yogurt, tandoori masala powder, lemon juice, garlic powder
  • marinate overnight
  • whack you oven on its highest setting (mine has a pizza setting that goes up to 270C)
  • cook until done - usually about 30 minutes. I check with a thermometer to ensure its not over done (aim for 75C)

If your oven doesn't get that hot, do the last 5 minutes of cooking under a grill to get some nice charring. Maybe add some smoked paprika to the marinade to get a more smoky taste.

Sometimes I just spatchcock a small chicken and cook it whole in the air fryer.
