Mother’s Day meal to suit all…..

We are doing a Mother’s Day meal with both our parents and sister in law. We will have 12 guests in total, 2 are vegetarian but will eat fish. 1 is very fussy and won’t eat rice/pasta/salad.
I wanted to avoid a traditional roast but do have a leg of lamb in the freezer.
Im thinking I need a meat dish and a fish dish plus sides……and I want to keep it as simple as possible! I can prep/cook the day before.
Please throw me your ideas for dinner and desserts - thank you in advance.

I'd do a big fish pie in advance.

Or a fish pie and a chicken pie.

Serve with jacket potatoes and lots of steamed greens. Then on the day you only need to do the veg, and the jacket potatoes and cook the pie.

Who in one is the fussy one - the fish one or a meat-eater one?

This is my go-to chicken pie recipe and the secret is the nice apple juice which is DELICIOUS!

Could also do some oven roasted salmon for the others instead of the fish pie?

My go to is

Parboil chunks of pumpkin. Slice.
Make an Italian tomato sauce.

Make a lasagne from the sliced pumpkin and tomato. Add bits of crumbled Greek feta or bacon for a salt hit. Leave out if necessary.
Cover with breadcrumbs and cheese and bake until brown and bubbling.

Easy, filling, keeps well, easy to scale up or down depending on your dish size.

Kleftiko for the meat-eaters? It cooks itself ( uses your leg of lamb, Good Food online has a perfect recipe) Salmon with a nice crust ( using chillies, preserved lemon and Panko breadcrumbs, etc.. salad, or steamed asparagus with parmesan shavings, ( expensive but they're in season), or roasted vegetables with a basalmic glaze? Baked new baby potatoes/ or steamed with butter.

I'd make a Mediterranean chicken casserole with olives, peppers and tomatoes, and for the vegetarians, Marry Me chickpea casserole, both could be made ahead and reheated on the day.
As accompaniments for both, I'd serve Parmentier potatoes or Greek roast potatoes with lemon, and a selection of green vegetables, perhaps broccoli peas Romanesco cauliflower.

Such amazing ideas especially for the lamb! However the fussy eater won’t do spice or sauces. But I could do them a separate lamb chop!
