Gluten-free vegetarian Mexican ideas please, preferably a little bit more authentic than loaded nachos, but relatively straightforward to make and bonus points if you can cook in advance!

I have the GF tortilla kit but not quite sure what to use instead of the chicken.
was also thinking of these frijoles, although I appreciate neither of these things are very authentic.

i was planning to have grated cheese, lettuce, sour cream, homemade guacamole and a salsa.
what else?

You could use butternut squash as an alternative to chicken, or a firm cheese?
lots of veggy Mexican options for dips - lots of different salsas. Not to mention corn or salads.
Thomasina Myers Wahaca cookbooks are really good.

Oaxaca style mole negro made with pork shank instead of chicken. Not as much effort as it sounds and absolutely worth it.

One thing I would consider would be how well the GF tortillas stand up to cooking. If you’ve used them before hopefully you have some idea. The sauce does involve making a roux, but I assume you must have a GF flour alternative that you use for this sort of thing.

Both the enchiladas and the sauce can be assembled in advance, then just put together and bake when you’re ready. They are fairly filling, but the point really is the toppings, top with shredded lettuce, tomatoes, onions, pico de gallo, grated cheddar or queso fresco, fresh guacamole, coriander.

Pork isn't vegi though is it?

OP I'd do a vegi chilli for the tortillas or serve alongside some rice.

A mango salsa would be nice.

Could you serve everything on the table and let people create their own burrito bowls.

This is my go-to for vegetarian tortilla fillings (I make corn tortillas but it's a bit stressful to make for lots of guests) -
ROAST SWEET POTATO - w/ cayenne + paprika
FRIJOLES - Wahaca's recipe looks good, and simple
SALSA - chopped white onion marinated in lime juice + green chilli + salt, then mix in chopped tomatoes + coriander
SLICES OF RAW COURGETTE - optional, adds a bit of crunch
HABANERO HOT SAUCE (or other fruity hot sauce) - Wahaca used to sell the best one but I can no longer find it. Luchito does a pretty good one.
SOUR CREAM
GRATED CHEESE
WORM SALT - this is fun to try, and absolutely delicious, tastes like smoky chorizo. Not exactly vegetarian.. but the non veggies can try it! (just sprinkle on top of the fillings when assembling)

I would do tacos instead (then people can make their own). Get the corn ones as they are naturally gluten free and taste so much nicer than the GF tortillas. Feta is a good alternative if you can’t get the proper Mexican cheese. Roasted vegetables in chipotle paste, slaw, etc. Does it have to be tacos? For a fancy meal (tacos seem like a weekday dinner) I would do something like this:

Whoops! Missed the veggie bit! Could make a lentil veggie meat and swap out the pork
