What can I do with leftover ricotta?

I have a lovely recipe which calls for 3 table spoons of ricotta, any ideas what I can do with the rest of tub? TIA

Spanakopita. Ricotta cake. Baked ricotta. It also freezes well.

Blob it on salad with nuts and honey alongside leaves, green beans, figs, prosciutto.

Use it with berries for easy dessert

Dd makes an incredible filling for ravioli with ricotta, garlic, some herbs, a bit of lemon and probably some other stuff, it’s very delicate and incredibly delicious.

I make gnudi with it - this recipe is so easy and they freeze really well. Definitely cook them a couple of extra minutes once they have risen to the surface.

Spread it on toast - loads of lovely toppings to pile on top:

  • cherry tomatoes fried in a frying pan until they burst - dress with basil and balsamic
  • sliced avocado and a fried/poached egg
  • figs and walnuts and balsamic drizzle

Forget all those time-consuming recipes above.
Wilted spinach, ricotta on top when they are still hot so it melts a little, balsamic vinegar (the thick variety) drizzle. On top or rice cakes or a bagel, or on its own. You’ll have to ricotta for the rest of your life after this.

I just have it in a bowl with honey and maybe a bit of lemon zest if you have it. Like you would Greek yoghurt.
