Crisp bubble and squeak

I used to make fantastic beautifully brown and crisp bottomed bubble and squeak but I’ve lost the knack. How do you do it? Into a hot or a cold pan? Butter, oil or both? Help!

Oil in a wok, don’t mess with it too much. Leave it to crisp then stir it in.

Oil, medium heat. Leave it alone until almost burnt, then mix it all up and leave alone until nearly burnt and repeat until max crispness achieved.

Bubble and squeak is one of my favourite food 🤤

In cook it with oil over a medium/high heat and as pp mentioned, wait till the bottom is crispy then mash it up a bit and do the same. Takes far longer to cook than you’d think and I also think it’s only of those foods that needs a generous amount of salt - like boiled eggs!

I’ve made b&s ‘burgers’ before by making them in to pattys and putting them in the oven… they’re delicious too!
