salmon fillet sprinkled with Cajun seasoning and bunged in the oven for 20 mins, zap jacket potatoes in microwave then put in the oven with salmon to finish off, serve with mange tout.

salmon stir fry.
hot smoked salmon with a pouch of grains and roasted veg. Bit of yoghurt on the side.
roasted chicken thighs with roasted veg.

I'll often double up so make enough roasted veg that we've got some for the next day.
I'll chuck a tin of chickpeas in almost anything and a bag of spinach.

I'll make a portion of dal and freeze some for later.

Any protein you love on noodles with salad - I often do salmon or tofu, you can do a family sized portion or several lunches worth quite easily, in the oven for 20-30 minutes with soy sauce, sesame oil, spices. I use the ready made noodles that you just bung in the microwave but choose whichever noodles you fancy, top with protein, more soy sauce, etc. I usually have it with a chopped salad of carrots, cucumber, spring onions, tomatoes, you can also top with kimchi or any stir fried or roasted veg. If I make the salmon or tofu in one go, it takes literally 4 minutes to throw together for the next day.

We also do a lot in wraps - salmon or tofu, as above or chicken or steak, cook how you like it. With lots of raw veg or roasted. Sometimes I also do roasted spiced chickpeas. In a wrap or flatbread with yogurt, raita, hot sauce, whatever suits your protein and seasoning. Sometimes we have with chips for the kids.

Eggs and sliced avocado on toast with a big fruit salad. We do a lot of breakfast for dinner sort of things as I don’t really ever have a cooked breakfast.

For lunch or dinner? Adults or children?
DH and I both WFH, so other than leftover for lunch, I might do a pasta.
Puttanesca, carbonara, Pasta alla sarde, pasta alla Norma.

As it gets hotter, I tend to do salads. Thai beef salad, som tam, mango salad, pear/blue cheese and pinenuts, pumpkin/pinenut/spinach salad.
