Has anyone got a nice easy chicken soup recipe? Feel I'm
Always throwing away chicken when I could make something nice!!

I make a version of this but just chuck the cooked chicken in.
There are lots of things you can do with left over chicken.

This is my favourite one - I use the leftover chicken from a roast for it and try to make a stock from the bones if I have time. Delicious and I feel like I'm going myself loads of good when I eat it. I also often change the cous cos for rice or small pasta:

incredibly easy and never fails

Soak cup of (preferably scotch) broth mix in water overnight

bring 1400 ml of chicken stock to boil
add chopped veg (onion, leek, carrot etc)

add chopped chicken leftovers

add broth mix

bring to boil then simmer for 45 minutes

I make this and use pearl barley. I keep it in the freezer for when I’ve got a cold on the way!

Use the roast chicken carcass to make a stock, then add to the skimmed stock any chopped up veg you have around. I tend to use leeks, onions, carrots, a few small skinned potatoes, a stick of celery, any bruised tomatoes (skinned) and possibly a few peas (just before serving).

This is a favourite. I’ve made it probably once a month for years. The recipe calls for using leftover chicken. I leave out the jalapeños until I’ve placed up dc because they don’t like it spicy and then I add the chopped jalapeños in at the end for us with lots of fresh coriander.

We love Tom Yum soup. Made with chicken stock, tom yum paste with cherry tomatoes, mushrooms, pak choi and left over chicken added.
