How to use up veg

I’m going away on Thursday and have a fridge drawer full of veg which I am determined to get through and without buying any food between now and then! I have 3 leeks, packet of mushrooms, a butternut squash, head of broccoli, red onion, shallots, coriander, a cucumber. Honestly why I have so much for one person I don’t know, I do tend to get excited about a particular recipe so will buy stuff in but then only have it for one meal and find I have surplus to try and eat. I have the usual cupboard ingredients including rice, spaghetti, penne, orzo, lentils and also some halloumi and cured meats to use. Anyone fancy throwing me some recipe ideas? Mainly for dinner ideas but handy for lunch too as WFH so plenty time to prep

You could make a butternut squash soup which will use up the red onion too. Extra portions can be frozen.

Soup. Chop roughly, dump in a big saucepan of water with 4 vegetable oxo cubes and a dose of mixed herbs and pepper.

Use your cucumber to make tzatziki to have with grilled halloumi, cold meats and bread for lunch

Soup - use your onion, butternut and broccoli for this (easy ti freeze for another day)

Leeks and mushrooms with cheese sauce would make a nice pie filling or with pasta

Agree butternut squash soup is an obvious place to start. For the mushrooms, either omelette (if you have eggs) or there's lots of garlic mushroom pasta dishes.

Worst comes, just curry and/or soup it all, it'll freeze!

Stuff the butternut with orzo, lentils, red onions, mushrooms, leek and halloumi.

Leek and potato soup (do you have spuds?)

Veg soup

Use the squash as the base of a veg curry or chilli.

Veg curry or chilli (just google a recipe and swap in whatever veg you have)
stir fry
soups
get some chicken and make chicken leek and mushroom pie
anything left - cook down with garlic, chilli and some tinned tomatoes and whizz up for pasta sauce to freeze.

I'd do Halloumi & butternut squash baked orzo (also uses the red onion)
Leek & Mushroom soup (use the shallots too)
A simple broccoli pasta (I do a few different ones but the Recipe tin eats one is my favourite)

I do a really simple cucumber salad with coriander and lemon/lime juice but it doesn't really go with any of those so I'd have it on the side of a deli meat toastie (if you have bread of course!)
