I have 4 really lovely fresh lemons. What can I make with them as the “star”? Has to be egg free.

cheesecake, shortbread, lemon mousse

Lemon tart. A very lemony cake. Lemonade (with a cheeky gin for the grown ups).
I have 8 or 10 lemons I need to use. Might made Lemon "marmalade".

I haven't made it personally so can't say whether it is fluorescent yellow irl!

Lemon chicken yummy

Toss 4 diced chicken breasts in 1 tbsp of corn flour, mix together 2tsp honey juice of 2 lemons 150ml chicken or veg stock 2tsp soya sauce. Fry the chicken in a little oil, and thinly slice 1 carrot and a red pepper, when chicken almost cooked add veg cook for a minute or two then add stock mix, let it simmer gently for 10 minutes until all cooked and sauce thick, serve with rice or noodle

Roast veg with roast halves of lemon (you can eat the roast lemon flesh, it's lovely)
Lemon marmalade with lemon rind chunks

Ah sorry I saw I got beaten to lemon chicken!

If you're just using the juice, then take the peel off in slivers and freeze it for cakes or puddings

How about lemon and white chocolate cookies? It won't use all the lemons though.

Has anyone made the eggless lemon curd? I’m concerned that the lemon will curdle the milk….

Just thought I’d report back on the lemon curd. It’s very good. A little custardy in texture obviously but an excellent substitute. Next time I’ll double the zest to make it sharper-I think the cornflour makes it a little bland.
