The Great Disappearing Cheese Mystery

Can anyone solve this mystery for me..?

Made (I thought) Nachos with melted cheese earlier: grated about half a block of cheddar on to them, shoved under the grill and... whoof. The cheese was gone.

There was a pile of toasted nachos on the tray with... residue around them. It looked more like a crime scene than food.

Am I going senile? Have I discovered a niche magic trick? Has someone been tampering with the cheddar?

If anyone here is a food tech and has answers, I am all eyes.. tia.

You heated it too much basically. Lower and slower is better.

What you really want to do is use a cheese sauce under the chips, then do some layers

Ah, okay! I had noticed that even cheese on toast seems a lot different these days- but then I've had a new oven in recent years so maybe these two things are related. Will try the sauce as you suggest, and moving the shelf lower... thank you!

Hard cheese hasn't been melt for ages, I find.

We've always used Red Leicester until it started to bypass the melted stage amd just turn into dry crust.

Mild cheddar still melts properly though.

It was cheapo Aldi mature cheddar... not reduced fat or anything fancy!

You need better quality cheese. Cheap cheese doesn't melt properly.

And I agree a lower temperature.

I'm a lover of cheap cheese so no snobbery here but ime every supermarket's version reacts differently.

Morrisons doesn't melt at all, just kind of goes rubbery like halloumi
Sainsburys goes greasy
Asda melts but then sort of takes a plastic consistency
Etc etc

I eat a lot of toasties and a failed one due to the cheese melt ruins my day!

@PsychoHotSauce what is your recommendation for cheapo cheese that won't disappoint, please? I live with cheese locusts.
