I’m sick of the same foods and sometimes take a notion to make something different. I’ve never tried FOS but it looks lovely with all the melted cheese etc… so my question is, is it worth it?

FOS is absolutely delicious. For the cheese part I always use Gruyère. I serve it with Croque Monsieur for dinner - admittedly a bit of a cheese imbalance

It's a dish of beauty but it's time consuming to make from scratch. Proper fos is not vegetarian, you need to make or buy good quality beef stock and then you need to cook the onions as slowly as you can to gently caramelise them.

It's delicious, but the last time I had it my stomach has clearly decided that onions in those sort of quantities are no longer acceptable - honestly, I have never had gas like it!

Shame as I absolutely love it!

I'd like to give this a go. Is it as good with mushroom stock as with beef stock?

@Gasp0deTheW0nderD0g I think it tastes good with mushroom stock.

DD makes it with chicken stock, because she has never made beef stock, and she adds red wine or pontac sauce.

We need to be honest here, most people don't make stock often. Lots of stock cubes are not very nice.

It may not be authentically French, but I find that a dollop or two of Marmite helps with the flavour.

If you have a food processor, you can use the slicing flat circular blade to cut the onions up. I do find the amount of onion chopping pretty faffy but it is also DELICIOUS.

I am now going to have to make some later this week. Yum!

And yes serve the cheesy toasty croutons on the side. So much easier to eat.

Use good beef stock and take a looong time with the onions. Good FOS is amazing. Bad FOS is diabolical!
