Easy Quiche Recipe + A Foolproof Crust?

I’d love to bake a quiche but usually just buy a ready-made one from Waitrose. Does anyone have an easy quiche recipe and a fail-safe crust recipe? A simple cheese and onion one would be perfect, but if you have a gourmet version, I’d love to give it a try!

A word of warning—I’m not great at baking, but I’m pretty good at cooking, so hopefully, I can manage 🧑‍🍳. Any tips would be much appreciated!

I cheat and buy tesco ready roll short crust pastry.

Line dish with pastry
Whisk 2 eggs with 150mls of milk
Sprinkle some cheese and onion on top of the pastry.
Pour the egg/milk mix on top
Sprinkle more cheese and onion.
Pop into the oven for 20mins
Check with a knife that it's cooked through. The knife should come out clean.

A mumsneter gave me this recipe years ago, it's never failed me and everyone loves it even dh who didn't like quiche.

This is an absolute winner for the custard filling - it sets perfectly. I often switch up the ingredients but the tomato one is delicious.

For pastry I cube it then put it back in the fridge and if I have time I leave some ice cubes to defrost in the fridge for the water so that everything is really cold.

I meant I cube the butter and then put it back in the fridge - not a very helpful hint. Or just buy some ready made. As long as it’s made with butter not oil it’s very good.

My DP is a chef. He made me quiche for the first time in 18 years tonight! It was delicious. Broccoli and Stilton.
