Can I freeze coconut milk?

As my username suggests, I have some lovely beetroot & have seen a BBC food recipe for beetroot & coconut soup. Thinking of batch cooking & freezing but would soup with coconut milk in it freeze & defrost ok?

I would think so. I've often frozen curries I've made with coconut milk and they've been fine. Maybe use full fat if you are worried.

The soup looks gorgeous!

You can freeze anything if you give it a stir. I have frozen coconut milk.

I used to buy tins of coconut milk and like you would sometimes have some left over.

Now I buy coconut block. It's solid pure coconut and you just cut of what you need and add it to the correct amount of hot water until it dissolves. From one block you get around two full tins of milk.
