Hi could anyone share their best, go-to banana bread recipe please? 🙏

This is the recipe I always use - old, hence measurements in ounces! I usually use a lot more than two bananas as it's my standard way of using up over-ripe bananas. It freezes well.

Martin’s banana cake
Ingredients
4 ozs butter (soft), or use spread
7 ozs light brown or muscovado sugar (this can be reduced)
2 eggs
At least 2 ripe bananas
Some lemon juice (at least half a lemon)
8 ozs plain flour
2 tsp baking powder

Method
Grease or line 2 small loaf tins. Pre-heat the oven to 180C. Mash the peeled bananas with the lemon juice. Doesn’t need to be very smooth. Cream the butter and sugar together. Fold in a little of the flour, then beat in the eggs. Add the rest of the flour and the baking powder. Mix the bananas in. Divide between the two small loaf tins and bake in the middle of the oven for at least 30 minutes. Should not need more than 40 minutes.

Very forgiving recipe. You can add raisins or chopped walnuts or chocolate chips. I’m sure some sort of ground spice addition would be good as well.

This. And it can be done in a slow cooker.

I make without a recipe and don't measure so can't help.
But I add some mixed spice and apple puree to the batter which adds a different dimension.
I also don't use eggs.

I have had many comments over the years that it is the best banana cake people have eaten.
