Non rock hard falafel

Whenever I got out and have them they are round bullets. I once had them like patties from a Cypriot shop and they were tender and lovely. Has anyone tried a recipe where they don't break their teeth?? I even made them my self but they still came out rock hard!

I just buy the Sainsbury’s or Cauldron falafel in the chiller sections - they’re not as good as lovely super authentic ones but they’re nice, and not at all rock hard. I microwave them to include them in wraps etc.
Sometimes if falafel have been deep fried or oven baked for too long they could go hard. Where are you getting them from?

Try combining the chickpeas with sweet potato. The texture is much softer. I use this recipe for oven baked sweet potato falafel.
