In a heavy based frying pan cook onions, mushrooms, peppers, courgette, whatever

ADd about 5/6 beaten eggs and cook slowly. Finish under grill

Tortilla omelette.

Slice some onions and potatoes and fry/steam them very gently in olive oil with the lid on - you need the potatoes to soften so this can take a while.

Once cooked but not coloured season and combine the onion and potatoes with a load of well-seasoned beaten eggs and then pour the whole lot into a deepish baking tray lined with baking paper.

Cook for about 30-40 minutes at about 180 degrees and I also sprinkle some grated cheese on top for the last 15 minutes or so.

This is good served warm or cold.

Home made lemon curd is yummy!

Make in the micro too ! Assuming 800 watts, adjust accordingly.

Here it is :

Grated rind and juice of 4 lemons
4 oz of butter, diced
1lb caster sugar
4 eggs, beaten

Mix together the lemon rind, juice, butter and sugar in a large heatproof bowl. Cook on high for about 4 minutes until butter has melted. Stir well

Stir in the eggs

Cook on high for 5 to 7 minutes, BUT stop after each minute and whisk well.

Stand for 5 minutes before potting and covering.

Keep in fridge for up to 14 days.

WARNING DO NOT OVERCOOK OR YOU WILL MAKE EGG TOFFEE

This is great with

Plain scones
Meringues
Crusty bread

Also makes great ice cream

Lemon curd would be great. We all love that and am loving the microwave aspect .
Misdee - As if the Lemon Drizzle cake would last long enough to parcel it up for you! .

Looks like I need to get some lemons in the morning then......

oh skip making dinner one day[too hot for the oven]and make loads of scotch eggs for lunch/dinner they are lovely and keep until the next day

Thanks for the link. We have had spanish omlette for lunch and I am off to the village to try and get some lemons now. Might try that spicy eggs recipe tomorrow if we don't get baking.
