Very little fat in mine, really just the parmesan at the end, And thats optional

I love mushrooms too

So do you cook your mushrooms and stir them in at the end of your risotto? Think I will do a low fat version, no butter, just a bit of olive oil then

This is the recipe I use , but I omit the butter and halve the parmesan
