I have never cooked gnocchi but want to think about adding it to my repertoire for feeding bottomless pit teenage ds and dh!

What brands should I be looking out for or things on packaging? Feel clueless.

roast with olive oil, salt and pepper and loads of halved cherry tomatoes. Done after 35 minutes then scatter cubed mozzarella and torn basil over the top. Delicious.

I’m hampered by the fact I don’t like roasted tomatoes. Life would be so much easier if I did!

Vac packed isn't a total disaster OP ... I use that to make a tray bake with tomatoe and basil sauce topped with a tonne of cheese and breadcrumbs (or crushed crisps if I'm feeling like a true peasant!)

I am going to make a creamy sausage sauce with some spinach and then lightly pan fry the gnocchi and then add it to the pan.

I like the tray bake ideas too.

And if this version isn't hideous, I'm going to try to buy fresh next time. I'd like something that I can have in the firdge and DS can just boil fo rhimself and add some pesto to or something for after school sometimes.

Lightly roasting them is nice too almost like a cheats mini roast potato. Just watch them like a hawk as they go from perfect to bullets in the blink of an eye.

Just a homemade white sauce with stilton crumbled in it instead of cheddar. You could sprinkle grated Italian hard cheese on top if you like.

We roast it. sometimes as the carbs under a sausage traybake, sometimes with cherry tomatoes, garlic, onions and mozzarella. Yesterday I roasted it then stirred some oxtail ragu I made at the weekend through it and topped it with talleggio. That was delicious!

Tortellini is a good standby for that too.
As is porridge with jars of stewed fruit - apples, cherries etc.
And if he likes Mexican, try rolling a couple of spoonfuls of tinned chilli beans (in tomato sauce) in tortilla wraps. Lay in a small oven proof dish, dollop of sour cream or creme fraiche and grated cheese on top, then wack it in the air fryer.

reporting back to say the pan fried gnocchi was a hit. And I loved how quick it was. From a health perspective, I might try to use fresh and boil next time, but ovreall, total win. thanks!
