Want to cook something different for the family this weekend. Have got Lamb as the meat, seen a recipe that I quite fancied.... Lamb and apricot Tangine..even though I have no tagine I am assuming a bit pot is ok!!!! The internet has so many recipes but would like a tried recipe. I have coeliac disease so cannot eat wheat, oats, rye or barley, so cous cous is a no no, but rice is ok. Wanted to try some breads too...can substitute with gluten free flour. Any help would be much appreciated. thankyou all very much in advance.

this is a Jamie Oliver recipe which I use quite a lot. Very easy to do.

cositjustok - glad you liked it. Quite often, I up the ante on the spices only because my boys like things spicy and hotter.

I had guests last Saturday and I did this recipe aswell as the lamb dish and again, I just added more of the spices. Also, I used chicken thighs and drumsticks - I took the meat off the bone and left it in biggish chunks as it makes it a little bit cheaper especially if you are cooking for a few. I put the lamb and the chicken in separate bags with the spices the day before and left them in the fridge to marinate.

Oh and I also used frozen spinach (mine came in cubes in a bag which I chucked about 6 of them in the pan).

Just in you are looking for a easier recipe - M&S have started doing jars of paste for making things like curry etc. They also do a Tagine paste which I bought recently and was really impressed with the results. You just add the meat, apricots, onion, and tomatoes and cook in oven for 1.5 hrs.
It was really tasty and not too many ingredients

Thanks for that Stirlingmum..will have a look when in M&S at the weekend..always nice to know shortcuts to cook yummy dishes...
