Pimp my dinner: roast chicken & bulgar wheat

I've got a whole chicken to roast and decided to final use the bulgar wheat I bought months ago but not sure how to turn them into an inspiring & tasty meal. DC aren't wild about grains so a bit of stock isn't going to cut it and I'm thinking some sort of spiced middle eastern dish? I'm going to a class at 6:30pm so want to crack on with prep &ideally have it pretty much ready to eat when I get home around 8. A simple one-pan oven baked/casserole type dish would be the dream but google isn't giving me an inspiration.

I've got a well stocker larder & fridge and DC eat everything except 'slimy veg' 🙄(mushrooms, aubergine, courgette - my favourites!) & I'm not wild about fruit in savoury food.

Any meal ideas?

Onion, smashed garlic gloves, roughly chopped veg (I'd do tomatoes plus some root veg, add the courgette and aubergine if you'd like them) quarter a lemon

Rest the chicken on the veg, drizzle with olive oil, season with salt and pepper.

I would cook the bulgur wheat separately with stock and turmeric/saffron, and stir through some butter. But you could just add it to the roasting tin half an hour (i think) or so before the end of the cooking time).

You can serve with rocket or spinach (you could wilt the spinach).

I’d make bulgar pilav with red pepper paste (or tomato purée if you can’t get the red pepper paste) and chicken stock.

Then coat the chicken with a mix of Greek yoghurt, olive oil, lemon juice, oregano and more red pepper paste/tomato purée mix and roast. Better if you can spatchcock it.
