All i want is to make delicious muffins...

But fairly cheap - none of yer fiddly ingredients like pecans or ground almonds, which cost a fortune and surely i can do without. Anyone got any ideas?

I'd particularly like a recipe involving glace cherries, or a good chocolate or choc chip recipe.

Pllllllleeeease?

You need Susan Reimer's book - it's fab and all the recipes work and are infinitely adaptable to whatever you have hanging around (yeuch to glace cherries though).

I have beeen explicitly told by DH (and my own budget) that i am not alowed a new book - i have to get the recipes off the net! Any links i could go to?

I have that book and could copy down a recipe for you, but can't be bothered right now. Is it urgent? A muffin emergency?

Oh, and i would appreciate that btw Dragonbutter - and please make it a non-cheesey or blueberry-y one (DH allergic to cheese, and just doesn't like blueberries)

You could buy the book used from amazon for about £3. I have the old edition.

Ok, i've had a look and can give you a basic muffin recipe with chocolate chips. Now just so I don't spend all morning doing this do you want metric or imperial?

The most important thing is not to mix it too much, ruins the texture. Batter should be barely combined.

choc chip muffins a la susan reimer (but based on memory and what I do)

9 oz s/r flour
3 big tbsps (green & blacks) cocoa
1/2 tsp salt
6 oz sugar
1 tsp bicarb of soda
packet of plain choc chips

stir together

1 egg
tsp vanilla
9 oz milk
3 oz veg oil

stir together

stir one into other, don't overstir .. into muffin cases

bake at 180 for 20 mins (poss 25) for big muffins, 15 mins for fairy cake sized muffins

The Basic Muffin
9oz plain flour*
3tsp baking powder
½ tsp salt
3oz white granulated sugar
1 egg
8 fl oz milk
3 fl oz corn oil or 3 oz butter or margarine melted

(for self raising flour use only 1 tsp baking powder)

  1. prepare muffin tins with liners or grease
  2. preheat oven to 375-300F (190-200C), Gas mark 5-6
  3. In a large bowl, sift together (or stir thoroughly with a fork): Flour, baking powder, and salt. Stir in sugar. Make a well in the centre and set it aside.
  4. In a separate bowl, beat egg lightly with a fork. Stir in milk and oil.
  5. Pour all of liquid ingredients into dry and stir just until combined, scraping sides and bottom of bowl as you stir. This mixing should take not more that about 20 seconds. Batter will be lumpy, but no dry flour should be visible. Do not over-stir.
  6. Fill muffin cups ¾ full (or to the top for larger muffins). Makes 10-11 standard size muffins. Bake about 20-35 minutes. Muffins are done when tops are lightly browned and spring back when touched. Best served warm, with or without butter.

Chocolate Chip Muffins
Add 3oz plain chocolate drops to dry mixture

Thanks everyone - have saved all the recipes - that way i have a separate choc chip and plain one, as well as spicy muffins

Will try making some next time i am avoiding 'proper' housework!
