I honestly love MN for these topics. Always so useful.

so, I have 2 pescatarians, 3 without dietary reqs, 1 veggie and a toddler - toddler is no issue - coming for dinner..
what can I make? Not too fussed about doing 2 things but would like to make something nice

Jamie Oliver's Fantastic Fish Pie - it's fantastic by name and by taste Grin I think this would be my deathrow dinner! Some veg on the side and a big cold glass of wine yum!

If you only want to make one meal then it’s got to be a veggie meal. Personally I’d just do a veggie lasagna with salad and homemade chips. I find veggie lasagna is still hearty and satisfying to people who eat meat.

You could do a veggie pie or curry with sides.

I'd do something where you plonk plates of food on the table and everyone helps themselves to what they want to eat:

-Fajitas/tacos. Wraps, grated cheese, lettuce, tomatoes, guacamole, refried beans, onion/peppers cooking in a taco/fajita mix, savoury rice, potentially a prawn/taco type dish for those that eat them to add to their wrap or sliced halloumi (the one without animal rennet) for the veggie.
-As someone else said, maybe an Indian theme with a few dishes
-Vegetable pie with salads or other veg as sides
