Left over roast pork ideas

We're having roast pork today so I'm looking for ideas for the left overs for tomorrow. I normally make pork fried rice but I'm kind of bored with it and tbh it's not always great.

So gimme some ideas please.

I am going to do cold pork, roast veg couscous, beetroot and feta salad and garlic bread. I often shred it add roasted veg, pesto and through it over pasta.

Pork bap with apple sauce and stuffing on with chips. God I want that now. This is a staple of where I’m from and there are shops dedicated to just serving this food of the gods.

I am also doing roast pork. I often use leftovers in a banh mi. I don’t bother with the pate though.

Slice, bash with meat mallet, egg, seasoned breadcrumbs, fry in butter til heated through.

Cold pork slices (or any cold leftover roast), fried egg and chips. Mustard. Meal of the Gods 😁
Alternatively, 100 to 1, the old school way of making meals out of Sunday leftovers. Chop up meat into cubes, plus leftover veg/roast potatoes. Cover in gravy and bake in the oven. Add extra potatoes to bulk it out. Can add cheese and breadcrumbs on top if you’re feeling fancy.
I think it comes from there being 1 piece of meat to every 100 pieces of potato, or that’s what my granny told me!

Shred it and fry it with Baharat spices & onions and serve in warm pittas with sliced tomatoes and yoghurt.

I'm going to make it into pulled pork and serve it in baps with coleslaw. Just add BBQ sauce and some apple cider vinegar I think, but there's tons of recipes for it.

Cafe near where I used to work did the most amazing pork roast toasties.

Thick sliced white bread, roast pork, stuffing, apple sauce, spring onion and cheese. Butter on the outside then fried till the bread was crispy and the cheese melty. Served it with a slab of hot crackling on top.

It was basically the reason I only worked in the office 2 days a week, I thought I might kill myself eating it every day every week. Same place also did a Full English Jacket Potato, that one never made my top 5 list 😃

Yes I was going to say this! A dish based on nasi goreng which usually contains pulled pork?
