Argh! I have to use my beef casserole steak up today. It isn't the weather for beef casserole

so what else can I make with it?

fajitas?

Make a beef casserole and freeze it?

Kebabs with some rice?

Curry or chilli, both dishes from very hot countries.

beef in oyster sauce with broccoli and sugar snaps and some egg noodles? bit lighter than casserole

Bung it in foil, marinade it and stick it on the bbq?

Can I just point out that if you make anything other than a casserole type dish with it, it will be yuck, the reason it is casserole beef is because it has fiberous sinew that needs to be broken down by long slow cooking. So it will be too tough for a dish like a stir-fry or fajitas that take quick cooking.

Carmenere that's what I was worried about. Bugger might have to go for the make and freeze option which means cooking 2 meals today

Peppered beef & rice.

Cook as if planning on casseroling.

Drain. Lightly fry some onions & mushrooms. Add beef, tomato puree, garlic and lots (and I mean lots) of freshly ground pepper. Add back just enough of the cooking stock to make a sauce.

Serve with boiled rice and side salad.

The 2nd part takes no time at all by the way, just bung everything in the pan whilst you cook the rice.

MAke and freeze-it will be pissing down next week no doubt and you will need a beef casserole.....
