Reasonably easy veggie main for dinner party

A tart? Spread some red onion chutney on a sheet of puff pastry and then top with sweet potato, beetroot, pistachios and either feta or goats cheese.

Chop up sweet potato, red onion, peppers, carrot & add a couple of tins of chickpeas. In a bowl put together oil, garlic, smoked paprika, cumin, honey, tomato puree and mix. Mix the two together, season and pour on an oven tray (with baking sheet) for 25 mins. Serve with cous cous or pitta along with some chutney, cream cheese and hummus 👌

What's the menu for the non vegetarians ?

If Im hosting a vegetarian I build their meal around what Im cooking for everyone else so Im not having to worry about sides and starters not being suitably matched

Good food has a nice recipe for courgette lasagne. Bit of an easy one but I served it to veggie friends and they loved it.

As it's a dinner party, you ideally want something you can mostly prep in advance, so a nice curry (make in advance and properly sweaty the spices and cook the onions down slowly. I'm particularly fond of a lentil daahl with butternut squash) - maybe serve with cous cous as it's quick to prep. Serve naan on the side (you could make these, but could buy them) and maybe a salad of finely chopped tomato, cucumber, onion and coriander.

I'd serve a mezze with lots of veg dishes and some (less) meat components.
It's a lovely social meal for entertaining friends.

Delia's Mediterranean veggie lasagne. A bit of a faff with de-salting the courgettes and aubergine but that could be skipped. I also don't de-skin the tomatoes and have also used canned whole tomatoes in the past. Of course nicer with fresh ones.
