Hi,

I'm looking for a dessert that travels well and is child friendly for DS' scout trip. Around 12 portions.

I am already baking a batch of muffins but need something else please

I always suggest the following as they last well and are quite robust...

Brownies
Millionaire shortbread
Traybakes
Flapjacks

You could always send a couple of packs of instant custard if they are able to boil water easily

Yes to Rocky Road. Or make a chocolate cake in tray, spread on butter icing and then thin layer of melted chocolate. Cut into squares before chocolate sets hard. Brownies with halved maltesers pressed into top go down well.

Get a big bag of toffees, melt them in a pan, add some butter . Then add chopped nuts and/or raisins. It make a sort of nut brittle. Put them onto buTtered grease brood paper as a slab or individual blobs.

I would avoid nuts:peanuts in case of allergies. And anything that needs refrigeration.

Iced Gingerbread or Lemon drizzle in a traybake or square tin that's way to portion.

I bake for my son’s scout trips and send either brownies, or I do large cookies bagged up in individual bags.

I once sent lemon drizzle to scout camp and was asked to do it by the leaders for every camp after that! Also a really simple but yum chocolate chip cookie recipe I got from here back in the day.
