Beef and a dinner party

Does anyone have any ideas for a main course for a dinner party that involves beef (I've got some indeterminate lumps in the freezer so it will need chopping up) that I can do well in advance and that just needs heating up with little tending? I was thinking it could go with potatoes dauphinoise as I can't mess that up if I get slightly pissed slightly too early which is what might happen...I am completely out of inspiration.

I agree with the bourguignon as you can’t really top that. Some other ideas:

beef and ale pie
beef stroganoff
beef tagine
beef stifado
slow cooked Chinese beef (slow cook in sherry with five spice)

Both those would be good but I've done BB a few times and can't remember which guests..Possibly these 🧐 The Mary B recipe is good but again I'm suspicious I've done it before.

I don't have to do those Spuds. I could do something entirely different and out of my comfort zone as long as I can do it well in advance.

How about a casserole with red onions, mushrooms, a good dollop of horseradish and a really good beef stock? Personally I think dauphinoise is a bit heavy with a casserole. How about just sliced potatoes with some finely sliced onion through the layers, a little thyme and topped up with beef stock rather than cream. Serve with purple sprouting and baked chantenay carrots. (Top and tail Carrots, knob of butter, scant tbs water, sprinkle of salt, cover with foil and bung in the bottom of the oven for about an hour.

balsamic beef and pepper stew it,s really good, incredibly easy and doesn't need any attention whilst you greet your guests. The recipe calls for 1 tbsp but I go for 2.

Hungarian goulash, simple to make, benefits from being prepared ahead of time. Garnish with plain Greek yoghurt and parsley immediately before serving. Serve with fresh tagliatelle or rice or potatoes Boulangere.

I've used a couple and kind of hybrid it now - i think I started with dairy diary though!

Beef rendang - tastes even better when made in advance and then reheated. Best recipe I've found is this one.
