Cornmeal uses?

I bought a big bag of fine cornmeal recently after seeing a recipe for polenta. I didn't like the polenta (boring and - in my case- lumpy!) so then tried making Hugh Fearnley-Whittingstall's corn bread. I didn't like that either - bland and dry (I usually like his recipes). I hate wasting food, so what else can I try with this cornmeal?

I'd try again with the polenta, there are videos etc on WWW.
I agree it can be boring, although better than mashed spuds.
I like it with plenty of cheese & then baked.

I sprinkle over roast potatoes before adding them into the hot fat. Makes them extra crunchy.

We use it when making pizza to stop the dough sticking to the board.

Dip halloumi or tofu in it to make a crispy batter before frying. Otherwise, make lots of custard

Corn dogs! I made them with DS2 once. They are an absolute faff as you have to deep fry them and the batter drips all over, but great fun and he loved eating them.

Also maybe try a different cornbread recipe, as they do vary - soak it in maple syrup and it'll taste nice either way...

This is the best ever polenta recipe - you cool it down in a pan, cut into triangles and fry it in a pan and it is crispy on the outside and creamy and custard on the inside.

Sorry just saw you tried that. US recipes might be tastier? Adding plenty of seasoning, fried onions etc would help make it interesting.

Sounds good! I might have to buy bacon especially for this. Can't remember the last time I had bacon...
