I really love meal planning, but this week am only doing very simple and easy (not too ambitious) things. Plus using up alot of the stuff I have in my freezer as it's been a tight month post-Christmas and I need to put money aside for our summer holiday.

Today - cajun creamy prawn pasta with salad and garlic bread
Tuesday- chicken korma (from freezer) with peas and courgettes
Wednesday- loaded potato skins with bacon and sour cream and chives with sweet corn and broccoli
Thursday - always a soup on thursdays- pea and ham for me (freezer) and chicken noodle for the Dcs (freezer)
Friday - sausages and mash with baked beans and broccoli
Saturday - slow cooked lamb roast with all the trimmings
Sunday- I usually make a pilaf with whatever meat is leftover- this week will be lamb.

We don't always have a pudding but this week I have hunted out all the tinned fruit that needs eating and we will have that with ice cream.

Nothing fancy this week. I need quick easy meals i can make in my sleep and that will hopefully be eaten by everyone (except DH who is vegetarian and on a diet and is eating mostly salads right now. )

Would love to know what others are planning!

I think I'm equally feeling the squeeze this week. Tonight we're having Jacket Potatoes, tomorrow bangers and mash, Wednesday Dahl, rice and Naans (3 for £1 from the Naan Bakery) not sure on the rest of the week yet but so far fancy roast chicken on Sunday.

Tonight - tandoori chicken wraps, rice and salad. Kids have chicken dipper wraps!
Tues - beef stew with mash and broccoli
Weds - pub dinner with family
Thu - pie, chips, veg and gravy
Fri - chilli with rice and nachos
Sat - something out the freezer
Sun - chicken roast

Cottage pie last night which I made with shin of beef in red wine, it was delicious 😋
Some sort of veggie pasta bake tonight
Chicken and veg orzo tomorrow
Out on Thursday so no cooking
Thai chicken meatballs Friday
DH away weekend so I'll probably have batch cooked pot luck out of the freezer.

Kiev and chips
Tortilla pizza
Burritos bowls no idea Saturday
Some kind of toast on Sunday probably porchetta

Love this idea!

Mon - Leftovers / picky bits as partner working late
Tue - food shop day so lots of choice now - chicken parmigiana in the air fryer with spaghetti and tenderstem broccoli
Wed - chicken curry with rice and naan and extra veg on the side for me
Thurs - beef burritos (we got extra large tortillas from Spices on the web)
Fri - homemade pizza
Sat - eating out
Sun - cottage pie or possibly toad in the hole

Tonight I did slow cooker beef brisket, roast potatoes, parsnips, carrots, peas and Yorkshire puddings. Reduced price apple pie for pudding. Tomorrow is tuna salad baguette. (Part baked ones). Wednesday pie, chips, peas and gravy. After that I'm stuck Lol

Tomorrow - jacket potatoes and breaded chicken
Wednesday - Orzo bake and crusty bread
Thursday - macaroni cheese
Friday - Chippy (we have visitors)

I'm veggie so I have green thai curry and a stir fry to add to that. I'll make the orzo bake veggie and I'll eat the macaroni cheese

Tuesday - spiced Spanish style (whole) chicken with chorizo, rice and ???
Wednesday - no idea! We tend to just get what we want as and when and don’t meal plan.

We don't really meal plan . Always have loads of fresh vegetables / salad stuff in , are veggie , and have 2 freezers so it's a case of open the freezer door and decide .
Today we are having Roast butternut squash , chickpea & spinach curry & Rice.

Wed- puff pastry tart with pesto, roasted tomatoes, caramelised onions and courgette
Thursday- halloumi salad
Friday- vegetables in satay sauce with sticky rice
Saturday- maybe a takeaway or something lazy!

Cheating tonight
We are having a COOK crab and fennel tagliatelle, which is delicious. I made lots of crostini earlier so DH will probably have those alongside his pasta.

Haven't planned past this Thursday really, hanging on for payday to do a big Friday online shopping order. So far we've got:

Mon: chicken and sweet potato korma and rice
Tue: Crispy chicken fillets with mash, green veggies, and onion gravy
Wed: Chilli con carne and rice
Thu: Freezer dinner of fish fingers, potato rosti and veggies. There's a portion of a spicy chicken curry in the freezer too, so my hubby and I will battle it out to see who has that instead of the bland beige dinner 😄.

I only have to feed myself as my kids are at uni/feed themselves and DH is travelling with work. I have the same thing most nights with slight modifications. Base of stirfried veg (not the pre-packaged ones as they go too mushy) - broccoli, baby corn, mushrooms, carrot, spinach and edamame then sticky rice or noodles, a protein (salmon fillet, chicken teriyaki, crispy tofu, beef bulgogi, tempura prawns), topped with a fried egg, kimchi and seaweed. Super filling and heavy on the veg as I'm trying to lose some weight and improve gut health.

Will also do a roast one evening and eat out one night at the weekend.

Tonight was left over indian from the weekend. (Yummy)
Tuesday- spaghetti bolognaise &garlic bread.
Wednesday- pizza (I'm working late)
Thursday- teriyaki chicken and veg stir fry with noodles.
Friday - chicken breasts in a cheese and mushroom sauce with mash and veg
Saturday- not sure- maybe omellette and chips.
Sunday- roast chicken.
