Overnight salmon

Yonks ago someone posted on here about 'cooking' a whole salmon in a tupperware of boiling stock overnight. Does this method work and if so, does anyone have a recipe for it?

Like this
Take one fish kettle and one salmon. Nowadays I cut off the head and the tail.
Put the salmon in the fish kettle
Add 6 black peppercorns and a sprig or two of parsley
Pour over one bottle of dry white
Top up with cold water
Bring to a light simmer
Turn off the heat
Leave overnight
Remove salmon from fish kettle
Make an incision the length of the back
Remove skin from one side
Remove the fillet from the bones
The bones shoukd come away easily from the underside fillet so Remove
Turn the fillet and remove the skin
Put the two fillets together, taking off any brown bits
Decorate platter with watercress and prawns.

It's much easier than it sounds
