Quick cook soup mix (can't find in shops!)

I used to buy quick cook soup mix (12 minutes boiling). DC quite liked a soup I made with it and chicken broth, chicken. Now I can't seem to find the mix in supermarkets or at a sensible price online. They have soup mixes but they take 40+ minutes, sometimes with soaking overnight.

Does anyone know where I can buy some? Or what ingredients I could buy that wouldn't take so long? Red split lentils are 25 minutes. Not sure what else used to be in it. I suppose tinned beans maybe?

Thank you! 🙂

Tinned beans, tinned green lentils, buckwheat (10 mins), bulgar wheat, quinoa (10 mins, make sure you rinse first).

Plus oats and little pasta shapes.

You can always put some of the beans in the freezer for the next batch.

@HappyNewFeckingYear Thank you! Very helpful, will look into all of those and check which might already be hiding in my cupboards.

Hi op I've never soaked lentils just shove them in the pot. I buy Tesco own ones if that helps.

I didn't know this existed! Is it as good as the kind you have to soak overnight? The one I use (Morrisons) contains Pearl barley, Yellow Split Peas, Green Split Peas, Marrowfat Peas, Red Split Lentils, Adzuki Beans. I think the lentils and pearl barely are fine without soaking but not sure about the rest.

They sell quick soak peas at asda, tesco, sainsburys etc. I use them for pea and ham soup. I don't know of any other 'quick' option, other than using a pressure cooker or just a tin of the cooked beans/legumes you wanted to use.

This is one of my regular batch cooks. I buy the normal soup mix and once prepared I freeze it in portions. If you did the same you wouldn't even need to boil for 12 minutes: just add 2 frozen 'grain cubes' to the broth and bring it back to the boil.

Thank you for the replies!

@ODFOx oh, that's a good idea!

@faithbuffy this sounded promising - "quick cook", thanks! However the info says presoak and boil 50 minutes which is all I've been able to find.

This
Waitrose quick cook minestrone
is an example of the type I used to be able to buy. I think Tesco/Sainsbury's did one too. It says it has spelt, barley, pasta, lentils and (split) peas in and took 10 mins. Thanks for all the suggestions, I'll have to find the ingredients and get cooking 😊
