I’m probably going to cook a meat casserole of some type to go with veg and mash for some friends coming round. Their daughter is veggie so I need to also cook a veggie option. Any suggestions please.

Does it have to be homemade? A Clives or Linda McCartney vegetarian pie would go lovely with what you are making or some veggie sausages

Could you do a vegetable stew which can then go with the mash and veg too? Or do you mean a whole different dish? Veggie shepherds pie? I make mine with puy lentils instead of mince / fake mince

Some veggies would probably prefer this when eating at houses who are unfamiliar with cooking veggie because you can literally show them the box and it puts their mind at rest you haven't inadvertently added something none veggie without realising.
I wouldn't be offended either or think it was low effort, I'd be pleased enough they'd provided a veggie option for me.

Cheese and onion pie, I am vegetarian and that’s the standard option I go for when eating out!

Thank you for all the ideas. I’d like to cook something rather than buy a ready meal and I know my friend’s daughter will be happy to eat home cooked food.

A home made pie or lentil shepherd's pie as pp said should be easy enough then and tick all the boxes :)
