Fermenting - how to eat once made!

Planning to try some fermenting after a friend gave me some kimchi.
Looking for ideas as to how to incorporate them into meals everyday.
What do you eat with your kimchi/sauerkraut?
What about cider vinegary things?
Thanks.

Pretty much everything - kimchi with salads, stir fry, scrambled eggs, avocado etc. and sauerkraut with sausage and mash or anything really. I make sure I eat some every day as it really helps gut wise

Try bulgogi recipe and have kimchi as a side dish. Or bibimbap. I also like kimchi fried rice and dumplings with pork or chicken.

I'd like to know too!

I've had sauerkraut with pork, but I'd assume the vinegary flavour would also work with fish.

As above! Kimchi fried rice is gorgeous and I adore a cheese and kimchi toastie. My friend makes an amazing sausage hash which she serves with sauerkraut for an incredible hangover breakfast.

Just remember that if you cook it you kill it. All the good organisms that you are carefully nurturing, don’t cook them. .Treat your kimchi/sauerkraut as an extra side/veggie on your plate with whatever you are having.
If you want to try a particular recipe, buy some cheap bottled stuff from the supermarket, that doesn’t have any live cultures left in it. Don’t waste the expensive refrigerated stuff on cooking.

I just eat it as part of a salad or in sandwiches

All of this. Kimchi fried rice with a fried egg on top is much ultimate Friday night comfort food 🤩

If you eat it from the jar/uncooked/raw don't eat too much at once as your stomach won't be used to it!!

Just think of it like coleslaw, the salad garnish on the edge of the plate.

I can eat the Loving Foods kimchi with turmeric, but otherwise I don't like the flavour. A heaped teaspoon on the side of a plate at lunch is plenty!

Thanks for all of these.
Off to buy some supplies tomorrow.
