Best meal to take to another house two hours away

What's a good meal I can prepare before I travel, for 8 - ideally vegetarian.

I was thinking some kind of tray based dish?

We did a huge paella last gathering and the rice just never cooked enough in the end 😣. But it was a good dish in theory because we could add the fish at the end to the non vegetarian servings.

Thanks for any suggestions.

Veggie curry? Veggie chilli/bolognese using quorn mince? They are always nice when left to sit for a bit I think.

I'd go lasagna too- nothing too liquidy in case of spills. Or maybe some sort of pie? Spanakopita type filo pie with tzatziki, greek salad, pitta, vine leaves etc sides?

I love this butternut squash & sage veggie lasagne

Curries, with rice and bread to be added later. Dishooms broccoli salad is a must side for me, can be made and dressing made in advance and tossed tother right before.

Tagine, moussaka, and tabbouleh.

We took a huge Massaman curry to friends last week, made the day before.
Made bread rolls (well the dough), and baked at friend's house.
No need for rice as it has potato.

Veggie fajitas which you can re-heat once there, and take along the sides. Everyone helps themselves.

Savoury rice, refried beans, salsa, lettuce, tomatoes, wraps, grated cheese, sour cream, guacomole etc.
I'm not veggie, but sliced peppers and onions cooked with the fajita mix would work. Or maybe add in slices of halloumi (if no rennet?).

Can be served with jacket potatoes or as it's quite filling serve it on a bed of fresh spinach with a dollop of homemade or whip bought salsa sauce.

How about a tagine. You could make it in advance and then just heat with some couscous and flatbreads when you get there.
