Vegetable nuggets question?

I was making some veggie nuggets for 8 month old, toddler and myself.
I'm using mashed potatoe as the filling Base and usual carrots, peas type veg and blitzing to smooth texture. Then drying out bread to make breadcrumbs...
But I've gone blank...onions? Do you put onions in a veggie nuggets? I want them to be tasty..im avoiding cheese as the baby is a little intolerant and we are retrying dairy at 9 months as per dietician advice.

You could try onion or garlic granules in the mash to give some extra flavour.

Which herb combo? I am a bit rubbish with getting the right match.

I have oregano, basil, thyme, coriander.
Then spices like cumin, paprika etc

Cumin is fabulous with peas, carrots, and potato. That would be my choice.
Oregano would go well if you added a bit of tomato puree or chopped sun dried tomatoes.
Lots of fresh coriander and a bit of paprika/ cumin would give you a falafel sort of flavour.
Any of those would work though. Experiment!

Thank you that's great! I am so clueless with herb/spices pairings and with what foods.
I need a crash course 😂 it would elevate our dinners.

You could also add a pinch of paprika to the breadcrumbs before coating.
