Just eaten this which I made yesterday. I t was more than the sum of its parts. Had with cheese and sour cream, rice and salad.

Any more ideas?

But our favourite veggie meals are:

Pepper and chickpea curry
Aubergine curry
Actually loads of curries - we did butternut and mange tout, red Thai regularly for months.
Butternut pasta with blue cheese and walnuts
I'm trying a new, bulkier tomato soup recipe tomorrow
Roasted veg on flatbreads with hummus and feta
Shakshuka-ish (not for me but Dh and DS love it)
Chargrilled greens (leeks/broccoli/asparagus/cavalo nero/spring onion or whatever similar veg you have). Then grilled halloumi which, when it's almost ready I make a quick sauce of lemon, honey an dgarlic (it caramalises in the pan), served in wraps.
Risottos are always good - butternut or pea are my favourite but I saw someone doing a leek and lemon one the other day i thought I might try. Mushroom, of course, is the classic.
Tomato, aubergine and chilli pasta - topped with feta or goats cheese
Roasted tomatoes and red onions (with garlic, bit of oil and balsamic) served on lentils with a bit of extra dressing and some feta (more for me - DS isn't keen on that level of lentil involvement!)

I recently did Jamie Oliver's no cook tomato pasta - it was okay, but I won't rush to do it again, but more because DH and DS didn't love it. I haven't done for a while but a no-cook spinach/ricotta/lemon pasta sauce has always gone down well too.

Another one we loved but I havent got around to doing again is Aubergine Schnitzel. I did it with a butterbean hummus and some wedges and it was very successful.
