Easy South East Asian dishes please.

My little one will only eat greens in a stirfry. Mine are pretty basic - ginger garlic and soy sauce.

Anyone got any easy noodle dishes that I stick loads of veg in?

Does it have to be Asian? I make a pasta with vegetable dish which is almost a stirfry and my dd loves it.
Heat some olive oil in a sauce pan, put in chopped vegetables and saute them at fairly high temperature and stir regularly. I use carrots, broccoli, peas and mushrooms but also when in season, asparagus, green beans, zucchini...
Cook pasta (penne are good, or those spirally ones, anything will do really).
Once vegetables have softened a bit add a spoonful or two of the pasta cooking water and sprinkle a little Marigold powder over them and stir. Just before serving add a tablespoon of creme fraiche or sour cream and the pasta to the vegetables, mix well.
Serve with some grated cheese on top.

you can stick extra greens in any stirfry.

Try the stir fry with garlic, soy sauce and a dash of oyster sauce.

For the veg, you could use any combination of beansprouts, shredded carrot or shredded cabbage, mange tout, french beans.

Start with the garlic, once it's golden, add the veg, once veg is slightly soften, add noodles (check if noodles need to be parboiled beforehand, fresh noodles don't need to be parboiled), add sauce and toss for a couple of minutes until noodles are coated.

You can add meat to this (before the veg) or throw an egg in at the end and stir it around so it coats the noodle & veg mixture.
