My slow cooker is 3 stops away. It's a 1.8 litre one as there's just me. Can I have some easy recipes please?
PS I'm really bad at following recipes Blush

I use the mixes.. for eg. chicken Casserole mix ( tells you on packet the ingredients you need)

Brisket! Line the pot in a generous amount of good olive oil, throw in 3-4 fresh crushed garlic cloves, pop the brisket in, salt it, add your favourite herbs (I smother mine in Palestinian zaatar). Half way through the cooking, I put in a beef stock cube (Kallo) that’s been melted in a small ramekin of hot water… just a bit of ‘juice’. I cook a small one for 5 hours, a larger brisket for 7-8. Dayleford does a large brisket that’ll easily feed 5 and it’s delicious (7-8 hours). Ocado does a smaller one that’ll feed 2-3 which cooks nicely in 5. The meat should melt in your mouth. You can add Epicure dried mushrooms as well for a nice mushroomy boost or fresh mushrooms towards the end (an hour or so before you serve up).

This is really simple I used it to teach my dc. Although I usually use 4 chicken breast and sometimes use passata instead of tinned tomatoes.
When using a Slow cooker many people often complain about it being too watery I take the lid off for 30 minutes and leave on high that solves the problem if required.

I'm having a beef casserole today. Stewing beef browned in a frying pan with onions, and garlic put in SC with an Oxo cube, tin of tomatoes and some paprika, Worcester Sauce tomato purée and a few herbs. Little boiling water and cook for several hours. I've also added carrots and parsnips.

I love pea/ham soup/stew and made one yesterday. I saw stew, because its much thicker than a watery soup. If you make too much, it can be frozen too.

  • Smoked ham hock or knuckle from the butcher (only because I haven't found a supermarket that sells them). I remove the skin then roughly chop the meat into cubes/pieces. Any meaty bits left on the bone will fall off when cooking.
  • Soak peas as directed on the packet. I prefer these quick soak ones which only take an hour or so and can be bought from asda, sainsburys, tescos.
  • I then throw any whatever veg I have- onion, celery, carrots, potato, swede etc.
  • Other than pepper, I don't use any other seasoning because the ham provides all the flavour.
  • Start with water only about 1/2 way up because the veg will release more. Top up with water if needed or you prefer a more soupy consistency.

Just remember that liquid doesn't evaporate off so put in much less than you would if cooking in the oven or on the hob.

I'm not good at following recipes and am a lazy cook but like a meaty stewy bowl of goodness so my go to is:

  • 500g meat ( beef shin, braising steak, pork shoulder, whatever cheap stewing cut looks good)
  • pack of sliced onion
  • pack of prepared baby carrots
  • pack of sliced mushrooms
  • tin of tomatoes
  • whatever seasoning pack appeals in that moment - chilli con carne, beef casserole, bolognaise

Put it all in the slow cooker raw, high for 2 hours, then low for the rest of the day until I decide I want to eat. Sometimes that means 4 hours on low, sometimes it's 8 hours, the joy of a slow cooker is that it doesn't matter and will just be hot and ready to eat when I want it.

Okay, this is the plan (based what I have in my fridge/cupboard):
Lamb leg steak
Carrots
Onion
Red pepper
Tin of chopped tomatoes
Sausage casserole mix (might be a bit over excited as forgot I had this)

Yes although great for batch cooking and freezing in individual portions.

Thanks everyone. In the end I used peas instead of tinned tomatoes and yellow pepper instead of red pepper - I can't even follow my own recipe Grin
I browned off the lamb and chopped more finely than usual and I've put it on high so will check how it's going in 2 hours.

I can't help thinking those carrots look like my fingers. Anyway here is the result. Thanks to everyone who contributed and I'll be trying those recipes next time I go shopping.
PS No chance of batch cooking with a slow cooker this small.
