Spicy rice to go with lamb biryani

Hi,

I wondered if anybody might know what I need to do to make the spicy rice that comes with lamb biryani that we get from the takeaway place? I would like to know how to make it myself.

Thanks!

I think the rice is the biryani? A biryani is a dish of rice layered with meat and veg in a big pot and then baked all together.

This is a good recipe: www.seriouseats.com/lamb-biryani

Biryani literally means "fried rice" or "baked rice" it is the dish itself.

Nice recipe here https://www.bbcgoodfood.com/recipes/chicken-biryani

Chicken biryani

A great one-pot rice dish that still tastes great a few days later – perfect for leftovers

Have a look at The Mighty Spice Co. We came across them at a country show and they sell the best Indian mixes, imo, including a really good Biriani. We haven't had an Indian takeaway since.

Indus or shan biryani mix, about £1 for a
packet in mossirons and tesco. That £1 packet will make more than one big pot. Possibly get will get two out if it groceries.morrisons.com/products/Indus-Biryani-Masala/112553304

Proper biryani is layers of rice and curry cooked in the oven, delicious and not difficult. It's ideal to make ahead for serving a crowd too. I make a few variations, as spicy or not to your preference. Last week we had a spicy cauliflower and green bean (vegan) biryani with tandoori chicken for the meat eaters. Serve with yogurt

If you like chicken biryiani. I was recommended this recipe on mumsnet and it is honestly the best biryiani I have ever tasted.

I just use the ginger garlic paste you can buy in a jar.

This is a great recipe, but the Chicken Berry Pulao at the Brittania restaurant in Bombay (the inspiration for Dishoom's dish) is so, so, much better.

We love Dishoom as DP is from Bombay, and that's where their food comes from.

Sadly, I doubt that I will ever get to eat Indian food in India, so this is the best I could do.

Hi,

Thanks so much for recommending this spice mix.

Do you think it would work if we used coconut water instead of yohurt? DS doesn't have dairy just now.,

Thanks!

To be honest I don't really like cream or yohurt in savoury food, and I would find coconut a bit sweet. For Boxing Day tea I made the Biryani with leftover turkey, about half a tin of tomatoes (although fresh are better), chopped leftover sprouts and parsnip.
