So I've been veggie for many years but I've got baby brain at the moment I think! I have a 2 month old and I'm struggling to be organised enough to make nutritious meals for us. Usually the baby is only happy to be put down in a bouncer for say 20 mins absolute tops. I can prep veg etc the night before or sometimes earlier in the day if I'm lucky and can get him to nap somewhere that isn't on me.

There is me, DH - who needs a very low carb and low GI diet for health reasons, but he can usually modify whatever it is to suit him so that's not really a problem - 6yo, and 3yo.

Bonus points please if you can share links with full recipes etc I'm just struggling to think straight these days! The more high protein the meal, the better too. Thanks!

One I do when I'm working as it takes so little prep....

Roasted tomatoes and red onions - toss in a tray with olive oil, garlic, balsamic vinegar and chilli flakes (optional). Roast until soft, squishy and caramalising.

Then I use a lentil pouch but, of course, you could cook themyourself. I usually toss the pouch into the roasting tray for a few minutes to warm through and absorb all that lovely oil. Then top with some feta cheese and fresh basil and, if required, a bit more balsamic vinegar.

A bag of stir fry veg, microwave rice and tofu chunks. Add some chilli, garlic and soy sauce to the veg or add thai curry paste and coconut milk. 10min cooking time max and no prep.

Do you have a spiralizer? Spiralize courgettes and use as 'green spaghetti' and use with whatever pastas you usually make. Or cook regular pasta for the kids and DH can spiralize his own to make it low carb.

I haven't had this for a while but I've seen others recommending it. In your circumstances I would adapt it in various ways, e.g. use a pouch of lentils or cook them in advance, boil the eggs ahead of time, use a ready-made spice mix such as garam masala instead of roasting the spices.
