Egg salad - what’s your recipe

If you were making an egg salad sandwich what do you use to bind the ingredients together? Plain mayo or something else? I am adding celery for crunch and spring onions for flavour, salt & pepper. Anything else?

I like flavouring mayo, e.g. mustard, sriracha, tom purée, horseradish etc. - whatever goes with the main ingredient.

70% mayo 30% salad cream, plus a little dijon mustard and plenty of black pepper.

I love egg salad!

I add dill, ideally fresh, to your ingredients OP.

I bind it with about 2/3 good mayo, 1/3 sour cream or yoghurt. I add to this Dijon mustard, lemon juice and a bit of lemon zest. Careful with the last.

Yogurt, chopped parsley, mustard, Worcestershire sauce, salt, pepper, chopped spring onion is my fave. Nice and simple. If I fancy spicy, nice fermented chili paste spread on a bread as well.
Or quark instead of yogurt. Very nice

I like a mayo and salad cream mix.

Or just kewpie mayo and salt.

In either case the yolks get whipped together with the mayo/salad cream and then the egg whites are finely diced and mixed in.

I don’t mix anything else in except salt and pepper but I do like well salted tomatoes in the sandwich at times.

Spring onion mixed in, slices of cucumber in the sandwich. Sometimes diced green pepper if I fancy some crunch in the mix, or finely chopped jalapeño for a bit of a kick.

I love eggs, egg salad and egg sarni is the only sarni I really like.

I suppose may is the norm. I don't like too much though. M&S used to do a lovely egg sarnie with tomato. I do think tomato goes well with egg. I also like a bit of chilli sauce with eggs hot or cold.

Yes, I was outraged when M and S stopped doing that sandwich -- it was by far my favourite of theirs!

Has anyone tried the new M&S egg sarnie ... with cornish cruncher and onion. I was a bit underwhelmed, just tasted like their cheese and onion one.
