Butternut squash inspiration

I would like to use up the remaining cut butternut squash from Christmas, but apart from risotto, which I have made lots of times already, I fancy pasta instead, maybe a tomato based one.

Can anyone recommend me a tried and tested recipe please?

As a vege curry but cooked off in cubes separately ie do you're onions garlic spices etc on one pan and your butternut in another - I usually coat it in sesame then when it's softened put in with the rest and tomatoes, coconut etc.

Or just air fryer special - butternut, aubergine, sweet potato - bit of oil and chilli powder - perfect easy veg sides.

Butternut squash roasted with garlic and pureed makes a lovely pizza sauce replacing the usual tomato. I like blue cheese on the top.

I made Butternut squash and Goats cheese orzo bake last night. Incredibly simple!

200g orzo
400ml veg stock
Cubed butternut squash
One small only sliced
Salt/pepper
A few bay leaves

Put all in an oven proof dish, cook for 20 mins uncovered

Add chunks of goats cheese after 10 mins

Delicious!

I do similar.
You could use feta or halloumi for this, as an alternative. I sometimes add courgette and aubergine.

Cook cubed butternut squash ( boiled or roasted, but I prefer boiled), mix with roasted peppers and onions, some wilted spinach and cream cheese in an oven proof dish, then top with cheddar/ blue cheese etc. and put it in the oven for a few minutes until the cheese melts. You could add reduced tinned tomatoes to the mix too if you like.

Ah, just seen you want pasta! I guess you could also add cooked pasta to the mix!

i recommend putting some in pancake mix. makes the pancakes sooooo soft and sweet!
