Rainbow rice - handful of rice, cooked in a little chicken stock with diced carrots, frozen peas, sweetcorn, peppers or whatever veg your children will eat. When the rice is cooked and the stock has been absorbed, mix in a beaten egg and some chopped ham and stir until the egg is cooked.
It's like child-friendly egg-friced rice with lots of veg - and the egg makes it sticky so it doesn't make too much mess.
AND it looks pretty

I do a similar thing using veggie stock and smoked tofu then add smoked paprika and cumin and a can of chickpeas. Kind of like mexican rice!

I only do rice for dd1 occasionaly as it is so painful to watch her eat it.

She is 4.3yrs and eats rice one grain at a time.
